Recipe.

Original Bibimbap –

Ingredients:

1 Lebanese cucumber, thinly sliced

2 tsp salt

2 cups baby spinach (rice alternative)

2 tsp sesame oil

2 tsp sesame seeds

1 red capsicum, thinly sliced

1 broccoli, cut into small florets

500g turkey mince

1 tsp olive oil

1 clove garlic, diced

1 small red chilli, diced

1 jar chilli kimchi

Method:

In a medium sized bowl soak cucumber slices in salt and enough water to cover. Set aside for 20mins until very tender. In a large bowl mix spinach leaves, sesame oil, sesame seeds and set aside until ready to assemble meal.

Sauté garlic and chilli in oil for 1 minute, then add turkey mince and fry until cooked. Whilst turkey is cooking steam capsicum and broccoli until tender.

Drain and rinse cucumber carefully.

Ready to assemble into dishes, use the spinach(or rice) as the base and arrange all vegetables in bowl creatively on top, finish with chilli kimchi and a garlic aioli/chilli sauce or extra sesame oil and/or soy sauce.
