Ingredients:
4 cloves garlic, finely diced
2 small red chilli’s, finely diced
1 tbsp. olive oil
1/2 jar Thai Style Laksa Paste (I’ve used Valcom brand)
Light coconut milk
Light coconut cream
1L chicken stock
1 broccoli, roughly chopped
1 zucchini, cut into small cubes
1 red capsicum, thinly sliced
250g pouch Quinoa, ready made (Coles or Woolworths)
3 chicken breast fillets, sliced or ready cooked BBQ chicken, shred (Coles or Woolworths)
1 jar Kimchi

Method:
Sauté garlic, chilli and laksa paste in oil until fragrant, for about 1min. If using chicken breasts add to frying pan and cook until brown. Pour in coconut milk, coconut cream, stock and simmer.
Add all vegetables, quinoa & chicken(if using ready cooked bbq chicken).
simmer until sauce has thickened and vegetables are tender, about 15-20mins.
Add 1/2 jar kimchi to laksa.
Serve and garnish with remaining Kimchi.
